Oh She Glows Salad

In 2012 I stumbled upon a vegan food blog that would end up changing my life.  I didn’t know it at the time but this amazingly talented, Canadian blogger named Angela would become a household name and her recipes would end up gracing our table two to three times a week.  Angela Liddon of Oh She Glows opened her kitchen to me that day and guided me through a beautiful journey of vegan recipe discovery.

Angela’s recipes stand out among the crowd for me for several reasons. The first being her beautiful, well-styled, colorful photos of the food she made are intriguing.  I strongly believe that every recipe should be paired with a beautiful photo.  Without that, you’re left to your own imagination when reading a list of ingredients.  A photo puts it right out there and says “This is what it will look like! Delicious!”  After trying one, two, three recipes, I quickly found that Angela was special because of the amount of time and dedication she puts into testing, tweaking, and refining each recipe.  I know she devotes a lot of time and resources to recipe development because her food is consistently good.  Angela also has a special allure because she shares her personal stories of struggle and success, happy times and challenges, and her followers feel they know her personally.  She’s really something special.

This is one of Angela’s newest recipes, her Vitamin Glow Warm Squash Salad.  It’s the perfect balance between what remains of winter and the hope of spring. The star of the show is roasted butternut squash and it’s served on a bed of baby spring greens.  This salad is hearty and a little sweet thanks to the squash and the dressing adds a punch of garlicky tartness that really makes it shine.
