There’s snow on the ground today and more is expected tonight. I’m in no mood to cook an elaborate meal. A big, hot bowl of oatmeal sounds perfect!
I cooked these whole grain oats on the stove with filtered water and a little salt. I tossed in 1/4 cup of raisins so they’d get plump and soft with the oats. When it was thick and steamy I took it off the stove and added a bit of brown sugar, chia seeds, pecans and coconut milk. It really satisfied my craving for wholesome comfort food.
Let the snow fall!
